But let's not forget that tomatoes of all shapes and sizes deserve a chance to be roasted. And we are here for them. Oh yes. Right here.
Servings: 2- Tomatoes
- Basil leaf
- Salt
- Black pepper
- Balsamic vinegar
- Olive oil
Cook Instructions
1. Start the oven at 325°. Place slices on a nonstick baking sheet, and drizzle (or spray) with a little olive oil. Roast for 30 minutes, then sprinkle with salt and turn the oven down to 300°. Cook for another 15 minutes.
2. Remove from oven and drizzle each Tomato with a little balsamic vinegar. Replace in oven, roast for five more minutes, and then serve garnished with basil Chiffonade and freshly ground black pepper.

Chicken Marinara Open PaniniBy: Connie KwanQuick 10 min meal if you have leftover cooked chicken and spaghetti sauce. If not, you can still throw this together in 30 minutes.
Servings: 4- Chicken
- Tomato paste
- Spinach
- Cheese
- Bread
- Olive oil
- Salt
- Black pepper
- Wine
Prep Instructions
1. Brush the chicken breast with the marainte.
2. Wash and dry the fresh spinach leaves.
Cook Instructions
1. Lightly oil the grill grate. Grill the chicken breasts for 7 minutes per side, or until juices run clear. Slice.
2. Layer a thin layer of Tomato sauce, spinach leaves, cooked chicken breast and grated cheese on the bread, then toast in the toaster oven or oven on medium-high (400F) for 5-10min until the cheese melts and the sauce is hot.
If you can use focaccia instead of regular bread, you will get panini the way the Italians intentioned it.
But regular bread is also good in a pinch, just add some olive oil to it. The trick to great panini is to keep the ingredients you put on as dry as possible so the bread will toast properly. Therefore drying the spinach leaves is an important step.

By: MacheesmoIt was kind of surprising to me how good this was, but if you are used to a basil pesto, this isn’t that much of a step away but it’s a great alternative. What’s funny about this pesto is that if you just taste a single sprig of mint, the flavor is intense, but when you grind down a lot of them, they lose some of that intensity and mixed with the other ingredients it just becomes a really delicious, light pesto.
Servings: 4- Mint
- Fresh parsley
- Pine nuts
- Garlic
- Parmesan cheese
- Olive oil
- Salt
- Pasta
Prep Instructions
1. Wash and remove mint and parsley leaves from stem.
Cook Instructions
1. Boil the pasta according to package instructions.
2. Put everything else in a blender and mix into a pesto.
3. Toss the pesto with the pasta and serve.

Stuffed Chicken Thighs and Green BeansBy: Andrea ChanOk, this one is a little advanced for an every-day dinner, but it's such a beautiful dish we decided to show it anyways. If you prep the chicken rolls on a previous day you can just pop it in the oven.
Servings: 4- Chicken thigh
- Turkey breast
- Cheese
- Black pepper
- Olive oil
- Green beans
Prep Instructions
1. Season boneless chicken thighs with salt and pepper. Lay chicken thighs skin side down, and evenly layer on shaved cajun turkey breast and asiago cheese. Roll chicken up tightly and secure with toothpicks.
Cook Instructions
1.Preheat oven to 400F.
2.Sear the rolls of chicken thighs to brown all sides. About 30 seconds per side.
3. Place chicken thighs on an oven safe pan lined with tin foil.
4. Bake for 7-10 minutes, or until juices run clear when pierced.
5. Meanwhile, Blanch the Green beans for 2 minutes and drain. Toss with olive oil and salt. Serve with the chicken.

Egg Chow FunBy: Connie KwanA simple, one pan dish that brings the taste of the orient to your family table.
Servings: 4- Chow fun noodles
- Egg
- Bell pepper
- Onion
- Soy sauce
- Salt
- Sugar
- Chili pepper
Prep Instructions
1. Soak the dried chow fun in cold water until soft. If you don't have time, then Boil it for 5-6 min until soft. Ignore this step if using fresh.
2. Slice the sweet peppers and Onion
3. Beat the eggs together.
Cook Instructions
1. Stirfry the Onion and peppers to 70% of desired softness.
2. Push the mixture aside in the pan. On the empty side, add the beaten eggs, scramble cook them to 70% of doneness.
3. Add the chow fun noodles and sauce and Stirfry everything together for about 5 min until hot.
If you like heat, add a few drops of extra hot sauce to the finished dish.
